Maple "Chicken of the Woods" Stir Fry

Our Woods Maple, Cold Brook, NY

Ingredients:

  • 1/2 lb. "Chicken of the Woods" mushrooms
    (forage/purchase mushrooms or substitute portabella mushrooms, beef, chicken or pork)

  • 1 whole medium yellow onion chopped

  • 2 cloves of garlic, sliced

  • 1 tablespoon extra virgin olive oil

  • 1/3 stick grass fed butter

  • Salt, pepper, sage, rosemary, thyme to taste
  • 1/2 cup (approx.) pure NYS maple syrup

Directions:
In sauce pan, heat oil and butter over medium heat. Add and reduce onion until translucent. Add garlic. Reduce. Add salt and pepper. Add sliced "Chicken of the Woods" mushrooms. Cook through on medium heat, about 5 to 7 minutes. Add herbs, seasoning to taste. Drizzle pure NYS maple syrup and heat through while stirring for an additional minute.
